This weekends menu

So the weekend came and went and as you know it we ate! A LOT.
Friday we had a treat. Hubby went to our favorite Spanish Restaurant Antojitos (latin cravings) This place is really good. We had Palomino Steak with white rice and papa rellena de carne (stuffed potato with meat) and Plantanos. Very Enjoyable but I can't take any credit for that great meal!!!!
Saturday we had French Fries and Fried Chicken, made two trays one Honey BBQ and one Buffalo . I made it a little different this time I used a lemon herb chicken breasts( purchased mistakenly thought it was regular chicken breasts) I rinsed a bit of the seasoning off as I was not sure how it would change my popcorn chicken well it came out so good that there was not one bite left and everyone wanted more.
Sunday we spent the day in the kitchen cooking as Grandpa was coming over for dinner and we have not had him over in several weeks.
First we made the dessert which was this

Then we made Home made Rolls. I don't have a photo yet but my daughter has one so I will have her send to me later and we can add
Then we made Two Trays of Lasagna Roll Ups
One Tray was with only Cheese for my non meat eaters and one with groundbeef and italian sausage.


  • 1 box Lasagna
  • 3/4 cup ricotta cheese
  • 1 cup Italian blend cheese shredded
  • 1-1/2 cups mozzarella cheese, shredded
  • 2 jars Spaghetti sauce, francesco rinaldis onion garlic is my preference
  • 2 cloves garlic cloves
  • 1/4 teaspoon black pepper, can add more to taste
  • 1/2 cup green pepper, chopped
  • 1/2 cup onion, chopped
  • a few sprinkles oregano
  • a few sprinkles salt
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder, can add more to taste
  • 1 pound ground beef
  • 2 medium size sausages italian sausage, sweet or mild your preference
  • 1 teaspoon olive oil
